for food costing"},"content":{"rendered":"<p>Here is the menu that I wrote for the the food costing project<\/p>\n<p>the Recipes for all of these dishes are in the recipe section<\/p>\n<p>A La Carte Menu for Food Costings:<br id=\"ax4p\" \/><br id=\"ax4p0\" \/><strong id=\"ax4p1\">Entree:<br id=\"ax4p2\" \/><br id=\"ax4p3\" \/>Carrot and Tomato Soup:<\/strong><br id=\"ax4p4\" \/><br id=\"ax4p5\" \/><em id=\"ax4p6\">A rich slightly spicy soup made with fresh carrots, tomatoes<br id=\"ax4p7\" \/>garlic, basil, parsley, a little chilli , black pepper and garnished with <br id=\"ax4p8\" \/>crispy pancetta and cream and served with crunchy garlic croutes.<br id=\"ax4p9\" \/>(a vegetarian option is available)<br id=\"ax4p10\" \/><br id=\"ax4p11\" \/><br id=\"ax4p12\" \/><\/em><strong id=\"ax4p13\">Chicken Livers:<br id=\"ax4p14\" \/><br id=\"ax4p15\" \/><\/strong><em id=\"ax4p16\">Fresh Chicken Livers, sauteed with onions, mushrooms and garlic<br id=\"ax4p17\" \/>in a\u00a0 creamy sauce and served on a\u00a0 layer of wilted spinach and steamed rice.<br id=\"ax4p18\" \/><br id=\"ax4p19\" \/><strong id=\"ax4p20\"><br id=\"ax4p21\" \/>Singapore style\u00a0 Prawns and noodles:<br id=\"ax4p22\" \/><br id=\"ax4p23\" \/><\/strong><\/em><em id=\"ax4p24\">King\u00a0 Prawns tossed with ginger, chilli , garlic, and soy sauce in <br id=\"ax4p25\" \/>Singapore noodles with tricolour capsicum slices and crunchy celery.<br id=\"ax4p26\" \/><br id=\"ax4p27\" \/><br id=\"ax4p28\" \/><\/em><strong id=\"ax4p29\">Mains:<br id=\"ax4p30\" \/><br id=\"ax4p31\" \/>Preserved Lemon and Roasted Pepper Rissotto:<br id=\"ax4p32\" \/><br id=\"ax4p33\" \/><\/strong><em id=\"ax4p34\">A creamy Rissotto with Preserved Lemons and Roasted peppers<br id=\"ax4p35\" \/>with a touch of Saffron and garnished with lemon wedges and shaved<br id=\"ax4p36\" \/>Parmesian Cheese.<br id=\"ax4p37\" \/><br id=\"ax4p38\" \/><\/em><strong id=\"ax4p39\">\u00a0Beef Schasliks:<br id=\"ax4p40\" \/><br id=\"ax4p41\" \/><\/strong><em id=\"ax4p42\">Tender Cubes of Scotch fillet skewered with baby onions,button mushrooms,<br id=\"ax4p43\" \/>tomatoes,and courgettes with a mushroom sauce and served on a potato and pea <br id=\"ax4p44\" \/>galatte.<br id=\"ax4p45\" \/><br id=\"ax4p46\" \/><\/em><strong id=\"ax4p47\">Honeyed Walnut\u00a0 and Blue Cheese Stuffed <br id=\"ax4p48\" \/>Chicken Breast:<br id=\"ax4p49\" \/><br id=\"ax4p50\" \/><\/strong><em id=\"ax4p51\">Whole Panko Crumbed Chicken Breast that is stuffed with Kikorangi Blue cheese <br id=\"ax4p52\" \/>and roasted honeyed walnuts and panfried and served on a Mesculan Salad <br id=\"ax4p53\" \/>and a potato and pumpkin Mash.<br id=\"ax4p54\" \/><br id=\"ax4p55\" \/><br id=\"ax4p56\" \/><\/em><strong id=\"ax4p57\">Dessert:<br id=\"ax4p58\" \/><br id=\"ax4p59\" \/>A Peppermint Chocolate Dream:<br id=\"ax4p60\" \/><br id=\"ax4p61\" \/><\/strong><em id=\"ax4p62\">Handmade traditional Icecream made with fresh mint leaves and Creme de menthe<br id=\"ax4p63\" \/>inside a dark chocolate dipped tuille basket and served with a hot chocolate sauce<br id=\"ax4p64\" \/>and a drizzle of creme de menthe.<br id=\"ax4p65\" \/><br id=\"ax4p66\" \/><\/em><strong id=\"ax4p67\">Trio of Tarts:<br id=\"ax4p68\" \/><br id=\"ax4p69\" \/><\/strong><em id=\"ax4p70\">3 minature tarts , a mix of hot and cold tarts, 1 with seasonal fruit<br id=\"ax4p71\" \/>1 with berries, and 1 with a velvet vanilla mousse and served with <br id=\"ax4p72\" \/>creme anglaise and a fruit garnish.(please ask your server on the fruits of the day)<br id=\"ax4p73\" \/><br id=\"ax4p74\" \/><\/em><strong id=\"ax4p75\">Coffee Baked Alaska:<br id=\"ax4p76\" \/><br id=\"ax4p77\" \/><\/strong><em id=\"ax4p78\">A Rich coffee cake with a coffee cream centre incased in hand made vanilla icecream<br id=\"ax4p79\" \/>and light meringue and served hot to your table with your choice of liquer sauce<br id=\"ax4p80\" \/>either Kahlua, Baileys , or
